Samaki Wa Maembe
Let's make some samaki wa maembe (fish cooked in mango sauce), a popular local dish throughout Lamu and much of the Swahili Coast. This light meal is nutritious and insanely easy to make. Plus, it only takes about 15 minutes to prepare. The perfect weekday dinner 🙂
Instructions & Ingredients:
For the Fish
-400g of whole fish, cleaned and sliced (you guessed it, we’re using tafi again)
-1 onion, finely chopped
-1 garlic, minced
-2 tomatoes
-1 green bell pepper
-1 just-ripe mango, peeled, cut into pieces
-2 red chillies (optional)
-1 tsp salt
-1 tsp turmeric
-½ cup coconut cream
-½ cup water
*Combine everything in a pan and let it cook for 15 minutes on medium heat.
For the Coconut Rice
-½ cup coconut cream
-2 cups rice, washed and drained
-4 cups water
-1 tsp salt
*Put the rice, salt, coconut cream and 4 cups of water in a pan. Over medium heat bring to a boil, stirring occasionally.
*Once the water is almost completely evaporated, reduce heat, cover with lid and simmer for about 10-15 minutes.
*Remove from heat and just before serving fluff up with a fork (not a spoon or you will mush up the rice). This separates the rice grains and gives it an appealing texture.
Serve the samaki wa maembe on a bed of coconut rice and enjoy 😋🤤
