Samaki Wa Kupaka (grilled fish in coconut sauce)

INGREDIENTS:

FOR THE FISH SEASONING / MARINADE:
• 2 lemons
• 1 teaspoon of salt
• 1 teaspoon of garlic paste
• 1 teaspoon of ginger paste
• 1 teaspoon of turmeric powder
• 1 teaspoon of black pepper
• 1 teaspoon of curry powder

FOR THE SAUCE:
• 1 & ¼ cups of heavy coconut cream
• 1/2 teaspoon of curry powder
• 1/2 teaspoon of turmeric
• 1/2 teaspoon of garlic & ginger paste
• 1 teaspoon of vegetable oil
• 1 coriander for garnishing

This is enough sauce and seasoning for a serving of 6 kgs of whole fish.

INSTRUCTIONS:
• Prepare the fish seasoning (turmeric, ginger, garlic, black pepper, curry powder, salt).
• Wash the fish, then slice it evenly on both sides.
• Rub the seasoning inside the crevices of the sliced fish and let it marinate for an hour or overnight in the refrigerator.
• Grill the fish on both sides till well cooked, on moderate heat for an average of 5 minutes on each side.
• On moderate heat, cook the sauce by pouring all the ingredients in the pan and letting it cook, and keep stirring the mixture until you achieve a thick consistency (approximately 10 minutes).
• Layer the sauce over the grilled fish and serve with sides of your choice.
